La toque blanche is a state-accredited private school specialising in the culinary professions and located in the very heart of the city.
The training courses are based on two main principles:
- Initial training leading to a diploma: this is a complete training course at the end of which a state-accredited diploma of kitchen technician or catering agent is issued. The trainees are trained in cooking, pastry-making, baking etc.
- Continuous training leading to certification is more specific. It is done in separate or followed workshops, in accelerated training, Masterclass or in weekend courses. These are workshops for people who wish to acquire basic techniques or those who wish to perfect their skills in a given field.
